PURPOSE:To obtain a flavoring oil having improved stability with time, etc., by dispersing and incorporating a flavoring material powder and fine solid of hardened rapeseed oil with a high behenic acid content or (and) hardened fish oil in a liquid fat or oil. CONSTITUTION:Hardened rapeseed oil having >=20wt% behenic acid content and <=5 iodine value or hardened fish oil having <=5 iodine value or both are dissolved in a liquid fat or oil, e.g. soybean oil or rapeseed oil, under heating. A flavoring material powder, e.g. powdered garlic or powdered meat extract, is then added and incorporated with the resultant fat or oil solution, and the solution is quenched and agitated. Alternatively, the fat or oil solution is quenched and agitated, and the flavoring material powder is added and incorporated therewith to disperse fine solid of the hardened oil and flavoring material powder in the liquid fat or oil and give the aimed liquid flavoring oil. The amount of the hardened oil to be used is suitably 0.3-4wt% based on the liquid fat or oil. |
