PROBLEM TO BE SOLVED: To produce non-coloredβ-1,3-glucan having a prescribed high branching degree and molecular weight. SOLUTION: A mutant belonging to genus Aureobasidium, having productivity ofβ-1,3-glucan and substantially not producing melanin pigment is cultured in a liquid medium controlled within a range of 6.8 to 8.5pH, the producedβ-1,3-glucan is separated and collected to produce the objectiveβ-1,3-glucan. In the process, Aureobasidium pullulans FERM P-15096 is preferably used. Branching degree, molecular weight and yield, etc., can be adjusted by selecting culturing conditions. |
