PROBLEM TO BE SOLVED: To develop a new crystallization method with which a production time is shortened and crystal particle diameters are adjusted freely, in comparison with the conventional cooling crystallization methods, in the production of raffinose crystal. SOLUTION: The problem is solved by an evaporation crystallization method including, for example, a raffinose-containing liquid preparation process, a raffinose-containing liquid concentration process, a seed crystal addition process, a crystal growth process under reduced pressure, a crystallite dissolution process, a crystallization process and a raffinose crystal recovery process by centrifugal separation (centrifugal sugar).
