PROBLEM TO BE SOLVED: To provide a roaster having desalting and defatting function. SOLUTION: The roaster 1 has a roaster chamber 2 and a receiving tray 3 removably accommodated in the roaster chamber 3 for storing water. Upper and lower heaters 8, 9 are provided above the receiving tray 2 in the roaster chamber 2 and a steam heater 17 is provided at the lower part of the roaster chamber 2. When a steam mode is selected, a control unit performs heating cooking controlling the upper and lower heaters 8, 9 and the steam heater 17.
