The cutting knife (10) has a knife housing (11) containing a blade carrier (15) for a knife blade (14), displaced against a return spring from a retracted position into a working position in which the knife blade projects from the housing, via an operating knob (42). The front part of the knife carrier cooperates with the knife housing for providing a motion converter (GE,GV), coupling a movement component perpendicular to the blade edge (48) with a movement component in the displacement direction (a) of the blade carrier.
