PROBLEM TO BE SOLVED: To obtain bean curd with glutinousness, excellent in taste, nutritive value and quality, capable of mass production, and useful for human health, etc., by boiling soybean milk prepared by mashing soybean followed by separating the resultant bean cure refuse, adding a mixture of common salt, bittern and seawater to the boiled soybean milk to effect coagulation. SOLUTION: Soybean milk prepared by mashing soybean after finishing its immersion in an immersion tank 3 by the use of a relevant machine 5 followed by separating the resultant bean curd refuse is boiled, and then incorporated with a mixture of common salt, bittern and seawater to effect coagulation, thus obtaining the objective bean curd. Preferably, the bean curd is produced through the following process: a plurality of steam-type pressure cookers 8 for boiling soybean milk and a plurality of coagulation vessels 9 for coagulating boiled soybean milk by adding a coagulant thereto are arranged, and the boiling initiation times from the respective pressure cookers 8 are shifted from one another, and in the order of completing the soybean milk boiling, respective batches of the boiled soybean milk are transferred to the corresponding separate coagulation vessels 9 followed by addition of a coagulant to effect coagulation of the soybean milk. |
