PURPOSE: A composition containing germinated brown rice extract for controlling serum glucose level is provided to suppress glucose absorption in the small intestine and to prevent or treat diabetes. CONSTITUTION: A composition for controlling serum glucose level contains solvent of germinated brown rice extract as an active ingredient. A method for preparing the germinated brown rice extract comprises: a step of drying germinated brown rice; a step of extracting the dried germinated brown rice with aqueous, organic solvent or mixture solvent thereof; a step of fractioning from non-polar solvent to polar solvent; and a step of drying the fraction.
