SOLUTION: This method comprises the steps of (1) treating the mushroom stock with steam, (2) washing the steam-treated mushroom stock with water, (3) treating the water-washed mushroom stock with hot air to reduce its water content, and (4) rapidly freezing the dried mushroom stock. |
