摘要 PURPOSE:Fish meat is treated with an enzyme or microorganism and the product is added to make rice cake or cookies or bun made therefrom to increase nice smell. CONSTITUTION:Fish meat is treated with a protease and/or a microorganism digesting protein at 0-60 deg.C for 5min-30 days to prepare a product in which the water-soluble nitrogen components account for preferably 20-50% based on the total nitrogen components. Then, the product is added to rice or rice flour in an amount of 0.1-10, preferably 0.1-5pts.wt. per 100pts.wt. of the rice or rice flour on the solid basis. Then, the rice or rice flour is subjected to rice cake making and the cake, when necessary is formed and roasted or fried.
