PURPOSE: A novel Pediococcus pentosaceus K-61 strain and a method for preparing a ginseng fermentation using the same are provided to maintain and improve glucose homeostasis. CONSTITUTION: A novel Pediococcus pentosaceus K-61(KFCC11461P) strain is isolated from human feces and has ginseng fermenting ability. A method for preparing a ginseng fermentation extract comprises: a step of fermenting ginseng powder suspension with Pediococcus pentosaceus K-61(KFCC11461P) at 35-37°C for 3-10 days to obtain fermentation; and a step of extracting the fermentation using ethanol, spirit, or butanol at 60°C-80°C for 2-4 hours.
