PURPOSE: To obtain the noodles excellent in the smell of sea without deteriorating the adhesivity and strength of the noodle lines by mixing wheat flour, Undaria pinnatifida powder, tangle powder, albumen powder, salt water, SAKE, salt, a colorant and an alkali ion water, and subsequently forming the noodle lines from the mixture under a specific condition. CONSTITUTION: For example, 10kg of wheat flour, 100g of Undaria pinnatifida powder, 100g of tangle powder, 150g of albumen powder, 400cc of salt water, 200cc of SAKE, 100g of salt, 6cc of coloidal color green GL-H, 3.5 liter of an alkali ion water are mixed, kneaded with rollers, formed into a HARUSAME (a kind of noodle) belt and subsequently cut into noodle lines to obtain the objective noodles. |
