<p>PURPOSE:To prepare a ''sake'' having desired alcohol content by extracting roasted unpolished rice with a mixture of alcohol and water, and to utilize the extraction residue as a deodorant and other food processing materials. CONSTITUTION:Unpolished rice is roasted at 150-180 deg.C, and extracted with 10 times volume of a mixture of alcohol and water (containing about 45% of alcohol) to obtain an extract having color and taste of about two times as thick as those of the malt whisky. It is diluted to an alcohol content of 14-42% with water or a water/alcohol mixture.</p> |
